Carlos Castro is well known among the Peruvian community of Orange, and surrounding counties. Having been working in the restaurant industry almost all his adult life, he bought his first restaurant in the city of Santa Ana ( Pollo Ricky ) back in 1997. He renamed it Mr. Pollo.
Early in his career, Carlos became really obsessed with getting the real traditional taste from Peru on every plate he prepared, devouring all the Peruvian Cook Books he could get his hands on, constantly researching the net, and always asking for tips and feedback from his patrons.
His efforts paid off. It was not long until Carlos( better known as Mr Pollo) became famous for providing the best Peruvian style rotisserie chicken in Orange County along with other delicious traditional dishes .
Eventually, Mr. Pollo had to relocate because his lease expired and the landlord had striked a deal with Bank of America. This was an unexpected turn of events. He moved to the city of Garden Grove in 2006, forming a partnership. It didn't take long for all of his loyal fans to locate him, and the business thrived. However, there were some discrepancies with his partner regarding the dishes that the restaurant should serve. Carlos knows his clients tastes very well and wanted to be in complete control, so in April of 2012, he decided to depart from the partnership and start a new enterprise. Only one month later, Señor Pollo was born! ( luckily for all of us who love to have the delicious traditional taste from Peru in Orange County).
